Smoked Brisket Cornbread Hash at Smoke Restaurant in Dallas

50 Cities 50 Hashes: Wendy Wofford-Garcia at Smoke Restaurant in Dallas!

Hashcapade Dallas was recently held at Smoke Restaurant, which features an upscale take on a Texas classic: BBQ! Smoke focuses on locally sourced ingredients with food that is delicious and creative. We had heard about their famous Smoked Brisket Cornbread Hash, which is considered one of the best brunch items in the entire Dallas-Fort Worth Metroplex. Read on!

We knew this was the perfect dish to feature for the Dallas Hashcapade…we simply had to taste it! Chef Tim Byres went a step further, creating a special hash in honor of our Hashcapade! We arrived on a busy Sunday and were quickly seated. The manager brought out a plate of perfectly cooked biscuits and house-made jam for us to enjoy while our hashes were prepared in the back.

First up was Smoke’s signature Smoked Brisket Cornbread Hash, which is served with a Poached Egg and Green Chile Rajas. This creative hash was fabulous…full of Texas-inspired flavors! The brisket is served in a cake-like form on top of the smoky cubed cornbread base. It was then topped with a perfectly poached egg and creamy-spicy chile rajas. We dug in and were blown away by the flavor. The hash was smoky from the house-smoked brisket, spicy from the green chilies, and a little bit sweet from the cubes of cornbread. The creamy chile rajas and poached egg provided a nice richness too. Every bite of this amazing hash was an explosion of flavors. The fun was just getting started!

Our second hash was Smoked Pork & Sweet Potato Hash, created especially for Hashcapade Dallas by Chef Byres. This hearty hash featured a base of cubed sweet potatoes topped with a smoked bone-in pork chop, BBQ sauce, and a pair of sunny-side-up eggs. We loved the flavors in this dish too! The crisp, earthy sweet potatoes worked really nicely with the smoky pork and the slightly sweet BBQ sauce. The sunny side up eggs were a nice touch…both visually and taste-wise. This customized hash was so delicious…especially for pork chop lovers like us!

Smoke was a welcoming, gracious host for our Dallas Hashcapade and I highly recommend their brunch if you find yourself visiting Dallas. Their weekend brunch is quite popular, so arrive early or late to beat the mid-morning crowds. The wait when we arrived for our 11:00AM Hashcapade reservation was more than an hour, but nobody seemed to mind. That’s always a good sign – when the food is so good that people don’t mind long waits! Excellent mimosas from the Smoke bar area also help pass the time. Smoke Restaurant is located at 901 Ft. Worth Avenue in Dallas, serving brunch from 8:00AM-3:00PM on Saturday and Sunday.

Wendy lives in San Antonio, Texas, with her husband, Michael, and their two “very spoiled” cats. She says, “I love to laugh and enjoy big-flavor foods! I started The Weekend Gourmet in August 2010 as a way to share my favorite recipes with family and friends. Since then, it’s sort of taken on a life of its own. We now feature recipes and product spotlights, regional restaurant features and culinary travelogues.” Her husband is an able mate, shooting all the photos…sounds like a match made in heaven!
